Legally, if my car was sitting at side of road, with mot and tax but not insured, what's the consequences?

If the cars fitted with ANPR, then it's scanning every car that has a readable number plate when driving down a road anyway!! Minimum you'd get is a fine from DVLA for having a car with Tax that's not insured. Can't remember how much it is, but when you don't have insurance you also have to declare SORN now.
Worst case scenario (and happens now and then) is 6 points, fine and a potentially a marker against you for having an uninsured vehicle on the road causing premium increases.
Although you're not driving it, the police told my friend (who got done for this) that the handbrake could fail and cause injury to someone or damage.
Silly, i know but that's the world of motoring sadly.

Yes and no....
Because you can't get tax without insurance DVLA changed it so now regulary check their databases for cars taxed which aren't insured then issue a fine.
The only good side of this is they usually don't catch on very quickly. It's usually only after a week or two they click on it isn't insured then fine but i've heard of people sell an uninsured car with tax after the insurance was cancelled in the space of a week and no fines came in.
It'll get even worse next month for buyers and sellers when they change how the taxing car works.
From next month the tax is registered to the owner of the car, rather than the car. So when you sell a car it's no longer possible to sell it with it's tax.
